"Paso-Vermú is delicious: spicy, herby, floral, bitter, sweet, smooth and beautifully balanced. But more than that it’s the kind of heart-warming story we all need in February. It’s the creation of a Shropshire couple, Tom Holt and Emma Williams-Holt, who met when they were working in Tanners’ wine cellars in Shrewsbury back in 2006. After Tom graduated in viticulture and oenology from Plumpton College (encouraged to got there by Tanners), they set off to make wine in various parts of the world, including New Zealand, before finally deciding on the Somontano region in north east Spain for their own wine venture, Paso-Primero (first steps). Their first vintage was 2014, a red wine, in 2015 they added a white and now Paso-Vermú is making its debut."

Paso-Primero

Paso Primero was founded by Tom and Emma Holt, ex-employees of Tanners. Tom left Tanners to study winemaking at Plumpton College in 2010, graduating with highest honours.

After spells working around the world, including New Zealand with Kate Radburnd at C J Pask, and Canada (near Niagara where Tom recalled the struggle with the sheer cold of winter killing too many vines), they settled on Somontano in northern Spain as the source for their first wine, Paso Primero Tinto with it's distinctive 'ladder label' and wren symbol. Somontano means 'under the mountain' and at 750 metres the region produces grapes of very high quality (due to the high altitude and cool climate found in Somontano) which are selected from mature, family-owned vineyards around Barbastro. The wines are made in an ultra modern winery at Sommos where Tom is helped by the DeBeroz family, the leading lights of the Somontano appellation. Quality of fruit is vital and the wine is designed to be fresh and fruity with about 30% barrel-aged for six months. Tempranillo, Merlot and Cabernet Sauvignon all perform well, while the Holts love working with Gewurztraminer and Riesling. They have also branched out into vermouths - their Paso Vermú proving a huge and immediate hit in Shropshire and Spain.

SATURDAY UK MAINLAND DELIVERY

Saturday Delivery is charged at a flat rate of £25. Orders must be received by 1pm Friday.

Our couriers can deliver to most geographically remote locations but do bear in mind that these do incur a higher delivery charge and will take longer to arrive.

Isle of Wight and Northern Ireland ‒ first case (up to 12 x 75cl) is charged at a flat rate of £25 then £10 per subsequent case.

Isles of Scilly, Isle of Man and Scottish Offshore Islands ‒ first case (up to 12 x 75cl) is charged at a flat rate of £30 then £10 per subsequent case.
