Château Sainte Eulalie

Château Sainte Eulalie lies on the southern edge of the Massif Central on the southern side of the Montagne Noire (Black Mountain), and was purchased in February 1996 by Isabelle Coustal. She has 40 hectares under vine from which she produces Minervois AOC and Minervois La Livinière AOC.

The vineyards lie at 200m – 250m in altitude, some are terraced and most have a south facing aspect that shelters them from northwinds and gives perfect exposition for the grapes to ripen fully in the southern French sun. Subsoils are covered by pebble topsoils that contain significant deposits of chalk, clay and manganese. They grow Syrah, Grenache, Carignan and Cinsault, and vines vary in age from 10 to 100 years. In 2006 they built a very green geothermal energy system to control the temperature in the winery. Their top cuvée Château Sainte-Eulalie La Cantilène, Minervois La Livinière, which we offer in some years, is named after ‘La Cantilène de Sainte Eulalie’ - the oldest French Romanesque poetic work written in 881.
