Haven Distillery was started by Duncan Fox and his wife Alex in 2016, at Tump Ash Farm in Herefordshire, combining Alex’s passion for botanicals with Duncan’s engineering and chemistry skills, to produce true artisan small-batch gins in their tiny distillery. They grow their own herbs on site including apple mint, angelica, bay, lemon thyme, lemon verbena and rosemary which they use fresh or dried, alongside traditionally sourced lemons and Italian juniper. Using a combination of cold vacuum and traditional distillation techniques, they produce a range of superb ‘London Dry’ gins – gins that legally that must be made from a base spirit at a minimum of 96% ABV with natural botanicals added during the distillation process.
